Sweet Pongal – Diwali Special Sweets  :-

Raw rice washed and drained – 1 cup
Moong dal – 1/2 cup
Grated Jaggery – 1 1/2 cup
Dry Coconut Pieces – 10
Water – 4 1/2 cups
Cardamom Powder – 1/2 tsp
Ghee – 3 tsps
Cashew nuts – 12-15
Raisins2 tsps
1.  Heat a container, add ghee and fry the cashew nuts, raisins, dry coconut pieces. Take away from the pan, keep aside.
2.  Within the same container, add the moong dal and fry until its gently red and remove from the pan.
3.  Heat a container, add grated jaggery. Cook it on medium flame until it gets sticky on touch. Strain it.
4.  Take another vessel, add water and boil on low flame. Add rice and moong dal. Cook until the rice is soft and also the mixture turns thick.
5.  Reduce the flame and add the jaggery syrup to the rice. Mix well. 
6.  Add Cardamom powder and fried cashew nuts, raisins, dry coconut pieces. Let it cook for two to three minutes and switch off the flame.
7. Then Sweet Pongal is ready.
